Observation: Facility is not sanitizing utensils, cutting boards, and other food equipment (other than those that are to be sanitized in place) as sanitizer solution does not reach third compartment sink.

Corrective Action(s): Until such time as Chemical supply company can adjust supply line so that it directly dispenses into warewashing sink, staff are to fill containers and dump into sink. As this is extremely laborious it is not suitable for long term.
The following is acceptable:
- Manual pour of undiluted sanitizer solution into third compartment of sink HOWEVER an adequate supply of test strips to check concentration of sanitize is required. This can be either QUAT or Chlorine or some other type of food grade sanitizer solution provided appropriate type of test strip is obtained and in use
- Extend distribution line for sanitizer solution.

Obtain QUAT based sanitizer solution for QUAT system of sanitizers. Use daily to ensure diluted concentration is appropriate.

Observation: Only hand sink in food preparation area is broken. Hot water faucet is not functional.
Facility has previously tried to repair unit.

Corrective Action(s): Use three compartment sink until such time as hot water tap is repaired.
THIS IS A PRIORITY. The fully functional hand sink is a requirement of the facility to remain in operation.

Observation: As observed on previous inspection reports - Light covers are missing in food production area and need to be installed.
If lights are shatterproof please provide proof.

COMMENTS
- Facility in EXCELLENT sanitary condition
- No evidence of pests
- Pest control program in place
- Coolers achieving temperatures of less than or equal to 4 degrees Celsius
- Sanitizer solution in use throughout food preparation areas and at concentrations of greater than or equal to 200ppm QUAT
- Sanitizer solution from dispensing unit at concentrations of greater than or equal to 200ppm QUAT
- Three functional sink plugs available for use observed
- All food items covered in cooler and freezer units
- Hair restraints in use
- Back door closed during inspection and tight fitting
- Cooler handles and seals in good sanitary condition
- All containers used to store lids/utensils/etc. in good sanitary condition
- Staff Personal items kept separate from kitchen equipment

NOTE: As facility has changed operation since the opening date and now has cutting of food items the facility requires proper wash-rinse and sanitize of all food preparation items. The three compartment sink is to be used as per manufacturer's directions.
