Follow up inspection:
-A probe thermometer was available on-site. Use this thermometer to measure the internal temperature of food.
-IR thermometer was available on-site as well. This IR thermometer only measures the surface temperature and should not be used to measure the internal temperature of food.
-The side surface of the chopping block and prep. table was cleaned.
-The vents in the ceiling were all cleaned to remove the buildup of dust.
-Aluminum foil containers were removed from the staff washroom.
-Liquid soap and cleaning supply was placed on the shelving unit in the washroom and was removed from the dry storage area used for food.
-Owner/Operator was present on-site. They have FOODSAFE Level 1 refresher course training valid until July 17, 2023 based on the FOODSAFE registry.

The following internal food temperatures were reviewed with the Owner/Operator:
1. Cooking temperatures: 74 degrees or hotter
2. Hot-holding temperatures: 60 degrees C or hotter.
3. Cooling temperatures: Cool food rapidly from 60 degrees C to 20 degrees C within 2 hours and 20 degrees C to 4 degrees C within 4 hours (total of 6 hours).
