Observation (CORRECTED DURING INSPECTION): 1. No sanitizer (chlorine) detected in rinse residual for low temperature dishwasher. Dishwasher was run for several cycles.
2. One spray bottle labeled quat sanitizer contained sanitizer at a concentration of 50 ppm quats.
Corrective Action(s): 1. Manager proposed to use the high temperature dishwasher which is available on site (downstairs) in order to wash and sanitize equipment and utensils in the interim until dishwasher is repaired. Ensure ALL equipment and utensils are properly washed, rinsed, and sanitized prior to opening to the public for service. Resanitize all equipment and utensils that may have been improperly washed and sanitized.
2. Discarded. Bottle refilled at dispenser and tested at 200 ppm quats. Ensure santiizer is changed as often as necessary in order to maintain concentrations required for safe and effective sanitizing of food contact surfaces (e.g. 200 ppm quats, or higher as per manufacturer specifications for food contact surfaces).

Observation: 1. No chlorine detected in rinse residual at the utensil surface for the low temperature dishwasher.
2. Central upright cooler at 7 degrees C at time of inspection. Limited potentially hazardous food storage.
Corrective Action(s): 1. Ensure dishwasher is in good working order and capable of sanitizing equipment and utensils. The minimum required chlorine concentration in the rinse residual at the utensil surface is 50 ppm chlorine (hypochlorite) for low temperature dishwashers. Have dishwasher serviced as necessary so that it is in good working order and capable of sanitizing equipment and utensils. Date to be corrected by: Today.
2. Food items moved to a working cooler at time of inspection. Ensure cooler is adjusted/serviced as necessary so that it is capable of maintaining food at 4 degrees C. Do not use for potentially hazardous food storage until such time.

Bar glasswasher measured 12.5 to 25 ppm iodine in the rinse residual (required: 12.5 to 25 ppm iodine).
Equipment and utensils in clean condition.
No signs of pest activity were observed at the time of inspection.
*One freezer (closest to dishwashing area) was at -14 degrees C at time of inspection.
The following was discussed: Ensure dishwasher log is maintained and appropriate sanitizer test strips are available on site.
