Observation (CORRECTED DURING INSPECTION): Chemical dishwasher had a final rinse of 10 ppm chlorine on dish surface during initial run.
Corrective Action(s): Operator removed all obstruction in the dishwasher (caught lids and food scraps) and dishwasher was able to produce 100 ppm chlorine. Ensure to monitor the chemical dishwasher so there are no obstruction for water flow.

Observation (CORRECTED DURING INSPECTION): Sanitizer pails observed to have 50 ppm QUATs.
Corrective Action(s): Operator replaced all sanitizer pails with 200 ppm QUATs solution at the time of inspection. Ensure to change sanitizer solution at least once every 2-4 hours.
