Observation (CORRECTED DURING INSPECTION): Eggs in display cooler at 6C to 9C on the left side. The right side was at 3C. Operator moved the eggs at >4C to walk-in cooler at time of inspection.

Chopped veggies (peppers 14C), ground Tuna (15C), Mayo (14C) found at room temperature. Staff mentioned it may have been out for 1.5h (she did not seem sure). Manager indicated that it should only take 15 mintues to chop up vegetables and make sandwiches, but it appeared that staff were doing multiple tasks at the same time. Discussed with operator that food should be discarded after a cumulation of 2 hours at room temperature. Manager discarded the food items mentioned when notified at time of inspection.

Observation (CORRECTED DURING INSPECTION): Two handwashing stations ran out of paper towels. Manager provided paper towels at the two stations when notified when notified

Observation: Display cooler not meeting cold-holding requirement for eggs (6C to 9C).
Corrective Action(s): Repair the cooler so that cooler can maintain eggs at = or <4C.

Observation (CORRECTED DURING INSPECTION): Thermometers for the eggs and raw beef display cooler not found. Manager provided thermometers for the coolers when notified at time of inspection.

Comments

-General sanitation of premises satisfactory. Ensure to clean and sanitize surfaces containing the take-out containers.
-As required from previous inspection, the following areas appeared cleaned: the fan in the walk-in cooler appeared cleaned at time of inspection, as well as the shelves under the soup area.
-All other display coolers at or <4C
-Walk-in cooler 1C/2C
-Display freezer -18C
-200ppm quats detected in spray bottles
-Hot holding >60C:
-beef sausage rools 60C to 65C (one at 56C discarded, manager removed the aluminum tray holding the food so that food touches the hot surface underneath)
-soup 78C to 82C
-No signs of pests at time of inspection. Pest reports provided. Contract in place for service monthly.
*Oven appeared caked up with grease and burnt debris. Ensure to address this for the future.
