Chemical Controls:
-Reviewed Manual Wash method: wash-rinse-sanitize with bleach & air dry

-rinsed dishware at the front is fully manually washed at least every 4 hours in the back

-bleach sanitizer buckets >100ppm as per test strips
-Sanitizer compartment at 3-compartment >100ppm chlorine residual

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used

Daily tracking sheets maintained for fridges -good

General Sanitation
In-Use Utensils: ice cream scoopers in ice and changed/washed <4 hours as per operator
-no signs of pests
NOTE: operator should be monitoring for pests with mechanical traps such as sticky traps
