Observation:
Accumulated food debris and stains on the floor, around and behind legs of unmoveable equipment and prep tables. These areas are hard to reach, and the accumulation of food will attract pests.
Corrective Action(s):
Clean these hard to reach areas on a regular basis to remove food debris and stains. Provide staff with the necessary equipment and time to do these areas, and/or contract a company (who has the necessary equipment) to clean these areas on a regular basis.

Comments

A routine inspection completed:
- Assembly cooler 4C; drink cooler 4C; walk-in-cooler 3C; walk-in-freezer -21C; hot holding above 60C; thermometers present; temps recorded daily.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- High temperature dishwasher had a rinse cycle temperature of 76.2C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in spray bottles had strength of 200ppm. Test strips obtained and present.
- All foods stored in food grade containers; covered; labelled; date coded; foods stored in groups with raw proteins below RTE foods; and food stored 6" off the floor on racks or platforms.
- No expired foods in use. FIFO rules being followed.
- General sanitation level is good.
- No signs of pests.
- All surfaces and equipment are in good working order.
- Valid, FoodSafe certified staff present.
- Exhaust canopy and filters are clean and were professionally done in October 2024. Next service due in April 2025, as per service sticker.
- Valid health permit and decal posted.
- Upper walls and ceiling tiles are clean and absent of dust.
- Cleaning scheduled developed and posted.

ACTION
Floors under and behind legs of unmovable tables and equipment need cleaning as there is accumulated food and dust. These areas are hard to reach, but still require to be regularly cleaned.
