Observation: A plastic lids with cracks in them in-use in upper prep cooler observed. It is difficult to clean thoroughly in-between cracks and so these areas can become points of contamination
Corrective Action(s): Discard all broken plastic lids and replace with new.

Comments

General Observations:
Some build-up of grease and debris on floor and in-between fryer and cook top units. Grease and debris are pest attractants. Otherwise, general sanitation is adequate.
Usually one kitchen staff member present, except on Saturdays
Meals include: continental breakfast, sandwiches and soup for lunch, and hot supper with dessert
Handsinks equipped with hot and cold running water, liquid soap and paper towel
Wiping cloths soak in buckets of quats sanitizer at 200 ppm
Coolers operating at </=4 C
Freezers operating at </= -18C
Temperature records for cooler/freezers maintained daily. Records kept for minimum 1 year.
Foods stored date labelled and covered to prevent contamination
Dry storage in sanitary condition. Scoops stored outside of bulk food bins.
Ventilation hood free of grease and debris. Last maintained September 2019.
No hot-holding observed during inspection
No signs of pests observed
High-temperature dishwasher reached >/= 71C at the plate level upon final rinse cycle. Records maintained daily.
