* Recommended replacing all rusted shelving in the walk-in cooler. * Clean the fan covers and light fixtures in the walk-in cooler to remove dust build up. * Ensure the hot holding display case is adjusted to ensure all hot items are maintained at 60 C or hotter. Chicken wings registered 54-55 C at the time of inspection. Walk-in cooler at 2.5 degrees C. Walk-in freezer at -21 degrees C. Sandwich preparation unit < 4 degrees C. All deli display coolers below 4 degrees C. All display/island coolers below 4 degrees C. Sushi display cooler at 1.5 degrees C. Hot holding of chickens > 60 C. Hot holding of soups > 60 C. Dishwasher reached 73.5 degrees C during final rinse. Quats sanitizer at the dispenser and in spray bottles tested 300 ppm. Liquid soap and paper towels available at all hand sinks.
