Observation (CORRECTED DURING INSPECTION): 1. Rice scoop was stored in room temperature water. Operator states usually ice water is used for storing the ice scoops.
2. Packaged raw meat was stored together with packaged raw vegetables. No evidence of direct contamination observed.
3. Bag of bread crumbs and maize starch was left open.
Corrective Action(s): 1. Clean rice scoop in the dishwasher. Discard the room temperature water and refill with fresh water with ice. Store the clean rice scoop in the ice water. Refill with ice as it melts. Date to be corrected by: Immediately
2. Move the packaged raw meat to a lower shelf in the cooler. Ensure raw meats are stored below vegetables and ready to eat foods to avoid accidental contamination. Date to be corrected by: Immediately
3. Seal both bags. Ensure all food is protected from contamination. Date to be corrected by: Immediately

- Freezers (stand-up, chests) at < or = -18C
- Hot holding units (rice) at > or = 60C
- High temperature dishwasher is available. Final rinse temperature reached 71.9C after 5 cycles. Ensure the rinse temperature reaches 82C/180F or greater before using the dishwasher.
