Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Bleach solution not made while food is being prepared.
Bleach is available but in the dry storage area. Too many items in the way to access bleach.
Owner is aware to come and make some bleach solution for cleaning - phoned during the inspection.
Correction: Ensure that bleach solution is made and available for cleaning when food is being prepared.
Clean and sanitize all surfaces.
Make this more accessible - e.g. store away from food in the washroom.

Observation: Bleach was at the back and not accessible at the time of inspection.
All 3 sinks including the hand sink has food debris.
No dishwashing yet.
Correction: Clean and sanitize sinks after food prep.
Fill sink with bleach solution.

Comments

Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers
-Hand sink at front had running water and was supplied fully, not obstructed, thank you.
o Operators had clean clothing for food preparation

Storage Temperatures
o Cold holding Coolers are below 4C
Holding for Tiffin Service - Operators were scooping out daal between 3:30-4PM, closer to the time these are taken for delivery. Observed during inspection. Thank you.

Food Processing and Food Protection
o Food Storage - Food is stored in covered containers. All items were covered with plastic wrap and protected in the walk in cooler. Great job.
-Walk in cooler was not over crowded. Floors were clear
-Walk ways and food prep areas were clear

Maintenance and Sanitation
o 3 Compartment Sink is fully supplied with bleach at 100ppm Chlorine (measured >1000ppm, then adjusted during inspection)
o Sanitizer buckets - have 100ppm Chlorine (measured >1000ppm, then adjusted. Reminder to use 1 tsp per gallon of water)
o Storage of chemicals is separate and away from food
o Pest control - there are no signs of pests at the time of inspection.
o Sanitation - this has greatly improved.
-Front area no longer has blocked access or piles of food on the floors
-Dry storage area has no food on the floors
-Appearance is clean and maintained. Keep up the great work!

Administration
o Valid operating permit is posted in public view
o Staff is certified in food safety - Food Safe certificates posted and operator has registered additional staff in food safe. Thank you.

Long term goals: as discussed with owner is to prepare food for festivals and large volumes in the other stores in Abbotsford location as this location cannot support this capacity of production. A few select items can be made here but not the full catering/festival menu.
