Observation: Paper mugs used to scoop items from dry storage bins instead of scoops with handles.
Corrective action: Obtain proper scoops for items in dry storage containers. Using paper cups increases the risk of contaminating the ingredients inside.

304 - Premises not free of pests [s. 26(a)]
Observation: Rodent activity were observed:

1) Rodent droppings found in multiple drawers under specialty coffee machine.
2) Deceased mouse found in trap near dish pit.

Corrective actions:

1) Clean out rodent droppings using a 1:10 dilution of household bleach. Soak a paper towel in the solution and wipe the droppings, then immediately discard. Do not sweep the droppings.
2) Contact professional pest control company to remove the rodent in the trap. Have the company add more traps (currently only 2 in facility) and implement further measures for pest control and monitoring. Email report to health inspector. (lisa.kirkham@fraserhealth.ca)
The premise should be free of rodents so that food is not contaminated from pest activity.

Observation: Back delivery doors have a gap in the middle junction.
Corrective action: Seal close the gap so that pests cannot slip into the facility.

-High-temp dishwasher reached plate-temperature of 78C at final rinse cycle.
-Hot-holding unit for soups at front service area at 71C. All soups were not held at 60C or greater.
-Hot-holding inserts had a temperature of greater than or equal to 60C.
Hash browns and fries inside had a temperature of 82C.
-Hot-holding inserts on right-side hot-held vegetables at 60C or greater.
-Front -beverage cooler at 4C or less.
-Prep-cooler and cooling wells in front service area at 4C or less.
-General sanitation of premise is satisfactory.
-Sanitizing pails had 200 ppm quats.
-Metal cups with sanitizer used to sanitize mixer/stirrer.
-Cutting instruments including knives, mandolin, and utensils such as rubber spatulas and ladles were clean and free of debris.
-Walk-in cooler at 4C, walk-in freezer at -18C or colder.
-Sanitizing dispenser at >/ 200 ppm.
-Sink plugs present in 3-compartment sink.
-Good hygiene practices including use of hair nets, clean uniforms, proper handwashing, and glove use observed.
