Observation (CORRECTED DURING INSPECTION): 3 cut jack fruit were displayed in a cooler than was incapable of keeping the cut product less than or equal to 4C. Food product was at 15C.
Corrective Action(s): The jack fruits were removed from sale. All cut fruits and vegetables must be kept less than or equal to 4C.

Comments

Routine inspection conducted and the following were noted:
- Handwashing stations equipped with liquid soap and paper towels
- 2 compartment and 3 compartment sinks satisfactory.
- Quat sanitizer available. Concentration was at 200ppm and test strips were also available.
- Walk-in cooler and display case cooler at 4C
- Coolers equipped with thermometers.

Chestnut peeling service available. This service is offered seasonally. Store manager is to provide a copy of the sanitation plan for the machine. No roasting of chest nuts on-site.
