Observation (CORRECTED DURING INSPECTION): The low temperature dishwasher dispensed 0 ppm chlorine sanitizer. The sanitizer line was primed and after five cycles, the dishwasher dispensed 50 ppm chlorine sanitizer. The sanitizer bucket is low. Ensure to replace the sanitizer bucket once it is empty.
Corrective Action(s): Rewash and re-sanitize all equipment, utensils, and other food contact surfaces immediately.

Observation: 1) Multiple food items were uncovered inside the walk in cooler, walk in freezer, and on counter top adjacent to the handwashing station.
2) Food items in metal containers were stored directly on the floors of the walk in cooler.
Corrective Action(s): 1) Cover all food items with proper lids or plastic wrap. Date to be corrected: Immediately.
2) Store all food items in containers off the floor in the walk in cooler. Date to be corrected: Immediately.

Observation: There was pooling of water in front of the walk in freezer. The operator claims that the pool of water was from the morning in which the floors were pressure washed.
Corrective Action(s): Clean and eliminate the pooling of water. The floors must be kept dry as possible. Date to be corrected: Immediately.

Observation: The ceiling tile above the hallway near the washrooms was missing. The operator informed that it was due to a recent water leak in the roof.
Corrective Action(s): Replace the missing ceiling tile. Date to be corrected: April 26, 2017.

Observation: Staff does not check the sanitizer concentration levels for low temperature dishwasher on a daily basis.
Corrective Action(s): Monitor the sanitizer concentration for the dishwasher daily (ie. in the morning before operating) with chlorine test strips and implement a regular schedule as part of your sanitation plan. The min chlorine concentration is 50 ppm at 24C. Date to be corrected: Today and ongoing.
