Observation: Various uncovered foods observed in the walk-in cooler and small cooler in prep area.
Corrective Action(s): Ensure all foods are properly contained in and covered with food grade materials at all times.

Observation: Facility requires a major reorganization and cleaning.
Corrective Action(s): Ensure to have all unnecessary items (i.e. unused tools/containers etc., newspapers/cardboards) removed from the facility. Organize the back area in a way that all foods (i.e. potatoes, dry goods) are placed in a designated area, AWAY from non-food items. Clean and sanitize all surfaces. Clean floors. Reorganize and clean the inside of the walk-in cooler.

Comments

Routine inspection conducted:

-Handwash station adequately supplied with liquid soap, paper towels and hot/cold running water.
-Coolers operating at/below required temperature of 4'C; Freezer operating below required temperature of -18'C.
NOTE: Ensure to have the chest freezer defrosted to remove the ice build up.
-Thermometers available in all refrigeration units.
-200ppm chlorine solution available in a bucket to hold wiping cloths.
-Low temperature dishwasher achieved >50ppm chlorine solution at the plate level after final rinse.
-Ventilation canopy hood serviced and maintained. Next service scheduled for December 2019.
-No evidence of pest activity observed.
-Washroom handsink satisfactory.

NOTE: Ensure any side dish items left at room temperature are discarded after 2 hours.

General sanitation of the facility requires improvement. Refer to above. Follow-up inspection will be conducted on/after Friday, November 22, 2019. Please contact the health inspector for any questions or concerns.
