Observation: Cleaning required on various containers for oil in the back of house. food and grease debris also seen in utensil drawer in the front of house.
Corrective Action(s): Clean the above noted items and areas. this must be done on a more frequent basis.

Observation: Oil container for brushing breads found to be stored with sponge inside with a dirty brush.
Corrective Action(s): Directed operator to discard both sponge and dirty brush.
Do not use sponges for holding oil. use only a clean and reusable container for holding oil.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 2 issues found;
Oven mitts found to be soaked with oil and discolored
Undercounter cooler at the front of house measured 5 degrees C ambient temperature. Ice build up observed inside, no food storage inside.
Corrective Action(s): Discard both pairs of oven mitts. Ensure that equipment and uniforms are maintained in a sanitary manner.
Adjust and defrost the cooler. Ensure that it is able to maintain contents <4 degrees C.

Operator no longer makes pizza on site, only makes traditional flatbreads (non-potentially hazardous)
Handsink stocked with liquid soap, paper towels, and hot/cold running water
Walk-in cooler measured 1 degrees C
3 comp sink with sink plugs available. bleach sanitizer solution measured >400 ppm chlorine. discussed mixing proper amount (1tsp to 1L of water)
no evidence of pest activity at the time of inspection
staff hygiene was satisfactory, FOODSAFE level 1 verified. Permit posted in a conspicuous location.

Additional menu items not approved at this time. contact district inspector to discuss proposal further. Updated food safety plan and menu must be provided for review.

Outstanding permit fee letter delivered. permit fee of $150 due within 10 working days. failure to pay will result in enforcement actions such as tickets and/or closure orders.
