Observation (CORRECTED DURING INSPECTION): Paneer cheese, dips, butter and marinated raw fish were stored in the preparation cooler measured with internal temperatures at 9C. Manager stated foods were prepared around 2 hours ago.
Corrective Action(s): Move all aforementioned food into the walk-in cooler. Potentially hazardous food must be stored at 4C or less.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Knives with food stains were stored in a plastic container and were not cleaned properly.
2. Various containers used for storing utensils were not in sanitary condition.
3. Large amount of food trays, utensils, inserts were stored in the back storage room and some directly on the floor. Manager stated they were not being used.
Corrective Action(s): Clean and sanitize the aforementioned knives and storage containers. Organize the back storage area and either store food containers in a sanitary condition or remove them from the premise. Correct by: March 8, 2023.

Observation: Food surfaces sanitizer was not available at the kitchen area.
Corrective Action(s): Prepare 200 ppm quats sanitizer in a spray bottle or bucket for the kitchen area. Clean and sanitize all food contact surfaces.

Observation: 1. Various containers of food stored in the coolers were not covered.
2. Sauce was stored in two opened metal cans in the walk-in cooler.
3. Apron was left on the food preparation table at the cooler.
Corrective Action(s): 1. Ensure all food containers are covered with a food-grade physical barrier such as saran warp.
2. Food in opened metal can must be transferred out after can is opened. Transfer the sauces in the two cans. Correct by: immediately.
3. Do not leave aprons on food contact surfaces. This area should be used for food preparation only. Corrected during inspection.

Corrective Action(s): Service / fix the aforementioned preparation cooler to ensure an ambient air temperature of 4C or less can be maintained. Do not use this cooler in the meantime. Correct by: March 10, 2023.

- Bar cooler at 8C. No potentially hazardous food stored inside.

- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- Low temperature dishwasher dispensed 100 ppm bleach sanitizer at the plate level.
