Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: -Plugs not present for 3 compartment sink to allow for proper manual warewashing whereby items are fully submerged. *This was identified on the previous routine inspection Aug. 2017 and has not been addressed.
Correction: -Supply plugs (3) for 3 compartment sink to allow for proper warewashing for items which are not washed in the dishwasher (ie. hoppers, pitchers) [Correction date: 1 week]
Comments

- Handsinks in both front service and back storage areas are provided with liquid soap, papertowels, hot and cold water.
- Proper handwashing practices observed at time of inspection.
- Coolers are operating at acceptable temperatures (≤4 deg C):
- Display Cooler: 4 deg C
- Double Door under counter Cooler (under espresso machines): 3 deg C
- Double Door under counter Cooler (under blenders): 4 deg C
- Sandwich under counter cooler: 1 deg C
- Upright Double Door Cooler (storage room): 1 deg C
- Upright Single Door Cooler (storage room): 4 deg C
- Freezers are operational and maintaining product in a frozen state (units being stocked at time of inspection):
- Upright Single Door Freezer: -12 deg C
- Upright Double Door Freezer: -14 deg C
- Each cooler and freezer unit provided with a thermometer to facilitate temperature monitoring.
- Food storage practices appear satisfactory - food is protected from contamination.
- Interiors of ice storage bin and ice machine, and ice scoops appear maintained in a sanitary condition.
- High Temperature Sanitizing Dishwasher: 79.5 deg C at dish surface; Minimum Wash and Rinse temperatures achieved as per unit data plate.
- Drain plugs available for 3-compartment sink to facilitate manual washing and sanitizing of equipment that cannot be washed in the dishwasher.
- Washing and sanitizing procedures reviewed for sandwich tongs and knives. Utensils in continuous use must be washed at least once every 4 hours.
- 200 ppm Quats sanitizer available from dispenser. Quats test strips available to verify sanitizer concentration.
- Wiping cloths stored in 200 ppm Quats sanitizer.
- Regular pest control services provided by Abell Pest Control.
- Follow all recommendations provided by your pest control service technician.
- Ensure all areas of the premies are accessible for pest control service.
- Maintain a higher level of sanitation in all areas to prevent potential pest attraction.

- Caulking/ sealant at wall interface adjacent to pitcher spray sink has been replaced; however, this is a high moisture area and caulking/ sealant must be regularly cleaned and replaced to prevent mold/ mildew growth as well as deterioration.

Note: Premises has proposed renovations. Floorplans have been submitted to Fraser Health for review. Renovations cannot take place until floorplans have been approved by FH. Premises will likely be closed during renovations. Temporary set-up may take place - please be advised that Health Approval is required for temporary arrangements. Contact the undersigned to review proposed plans. Written Approval will be granted if there are no objections upon review.
