Comments

-The owner is planning on installing a new fume hood so that a new grill can be installed next to the donair spits. Ensure that new floor plans are submitted for the new fume hood and that the new ventilation hood is commercial grade. -Note: The two-compartment sink will need to be upgraded if there is a change of ownership or a change in services offered. All coolers were < 4 C. Hot holding units were > 60 C. Hand sinks supplied with hot and cold water, soap and paper towels. Bleach was at 100ppm in the 2- compartment sinks. No evidence of pests. General sanitation was satisfactory.
