Observation (CORRECTED DURING INSPECTION): Surface sanitizer in bucket registered 0 ppm for quats.
Corrective Action(s): Buckets were re-filled with a 200 ppm quats solution. Ensure sanitizer solution is changed at an adequate frequency.

Observation: Mice droppings observed throughout premises (on shelves, underneath equipment and near metal gate) and two mice seen in a trap located near the walk-in freezer.
Corrective Action(s): Remove droppings daily and sanitize area.
Keep food in pest proof containers and off the floor.
Discard food that has become contaminated.
Declutter back kitchen and storage area.
Fill any holes/gaps.
Follow recommendations provided by on-site pest manager and pest control services.

Routine Inspection
Hand sinks equipped with hot and cold running water, liquid soap and single-use towels.
Coolers at 4 C or below.
Freezer at -10 C (should be -18 C).
Hot holding at 60 C or above.
Surface sanitizer - see above.
High temperature not in use at the time of inspection (compatible detergent was not available). Staff are rinsing dishes and sending dishes to main hospital kitchen for dishwashing.
Dishwasher was turned off and not inspected. Keep extra supply of cleaning chemicals so this does not happen again.
Staff wearing hair nets.
Pest control services are in place.
