Observation (CORRECTED DURING INSPECTION): 1) In use utensils used for food preparation being stored in water. Water appeared cloudy/dirty.

2) Mold/mildew noted in ice machine

Corrective Action(s): 1) Wash and sanitize utensils which were stored in cloudy/dirty water. In use utensils may be stored on a clean portion of the food preparation surface or in ice water (4C or colder) and cleaned and sanitized every 4 hours (in dishwasher). Utensils must be cleaned and sanitized after using on raw meat products and prior to using on ready to eat items.

2) Empty and discard ice from ice machine. Clean and sanitize ice machine to remove mold/mildew.

Observation: - Minor amount of mouse droppings noted in the following areas of the floor:
- behind ice machine
- near dry storage shelving where canned goods are stored
- under convection oven
Note: Droppings appear dry and may be from past issues; however, need to be cleaned and areas need to be monitored.
Corrective Action(s): - Clean areas above to remove droppings and then disinfect areas.
- Continue to monitor these areas for any further activity. If noted, ensure droppings are cleaned up immediately.

Comments

- General sanitation of premises was satisfactory. Ensure flour spilled on floor around stand mixer is cleaned.
- Handsinks in kitchen and bar area were supplied with liquid soap and paper towel
- Staff/public washrooms maintained and supplied with liquid soap and paper towel
- Coolers were operating at acceptable temperatures (4C or colder):
- walk-in cooler 3C
- work top cooler 2C
- line cooler 4C
- 2 door undercounter cooler (front) 4C
- display cooler 4C
- line cooler (front) 2C
(Note: 1 display cooler not in use)
- Freezers were maintaining food products in a frozen state
- Foods in coolers were stored in a manner to prevent contamination with foods items covered and raw meats and raw eggs stored beneath ready to eat items
- Dishwasher was operational and dispensing adequate sanitizer to sanitize dishes. >50ppm chlorine detected on dish after cycle. Chlorine test strips present. Ensure dishwasher is checked at least daily to ensure dishes are being sanitized.
- Chlorine sanitizer solution present with in use cloths stored in solution. Concentration measured 200ppm chlorine.
- Pest Control contract in place with service every 2-3 weeks. Viewed recent service reports at time of the inspection.
