Equipment food-contact surfaces and utensils shall be clean to the sight and touch. A surface that is soiled cannot be effectively sanitized. Drain the ice and clean the machine.
3-501.18(A)(1)-(3)  Corrected During Inspection Critical Observed the following ready-to-eat, potentially hazardous food being held for more than 7 days at 41F: a plastic container containing bleu cheese dated 9/3/12 in the three door sliding door refrigerator
Foods shall be discarded if it: 1) exceeds 7 days or at 41F (except the time it is frozen); or 2) is in a container or package that does not bear a date or day. Discarded.
