105 | Critical Repeat Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s) Observation: Grill line cooler reaches 4 degrees celsius inside the unit at time of inspection. However, the cooler cannot maintain proper temperatures at the inserts. This is made worse by the fact that staff are not using the inserts correctly (i.e. they put the food in containers on top of the inserts instead of putting food directly into the inserts). Another problem is that there is no lid to put over the inserts. This makes it so that they cannot be properly insulated from the heat of the grill. Garlic butter, bacon, sauces and vegetables were all stored at 10-11 degrees Celsius on top of the grill line cooler. Corrective Action: Four things can improve this situation: 1. If staff are not aware of the proper method of storing food in this style of cooler, they should be properly trained, which should include FoodSafe level 1 training. 2. The food should be placed directly into the inserts so that the cold air from the cooler can directly cool the food to proper temperatures, if this is not possible, the food should be stored in another cooler. 3. A lid should be provided to the cooler so that the food can be further cooled during slow periods when the food is not in use. 4. If the previous 3 steps do not ensure that food in the inserts is cooled to 4 degrees Celsius or below as measured by staff using a probe thermometer, the compressor to the cooler should be properly repaired/replaced. A reinspection will be conducted on July 8th at 2pm to ensure that this matter has been addressed properly.
