Permission granted to open facility on August 2nd, 2005
The following items will be addressed prior to opening:
- Ensure thermometers in all refrigerated coolers and freezers.
- New cutting boards will be purchased. Separate cutting boards will be used: one for fish, and another for fresh produce and ready-to-eat foods.
- Refrigeration and freezer temperatures will be monitored daily and recorded.
- Sanitizing solution for dishwasher and wiping cloths will be monitored and recorded daily.
- Ensure wiping cloths kept in sanitizing solution (100ppm chlorine). Change sanitizing solution every 2 hours.
- Thorough cleaning of facility required prior to opening.
- Store all cleaning supplies in separate area away from food (Mop sink cupboard).
- Install self-closure on bathroom door.
- Washroom requires sealant applied behind sink and around plumbing pipes below sink. Repair/seal hole in wall in front of toilet.
Other areas noted at time of inspection:
- All refrigerated cooler temperatures were below 4C at time of inspection = good.
- Freezer temperature -24C = good.
- Ecolab chlorine sanitizer used in dishwasher - 100ppm chlorine = good. Operator has test strips available.
- Reviewed Food Safety Plans with operator for all menu items - approved 29/07/05.
- Reviewed Sanitation Plans with operator - approved 29/07/05.
Follow-up inspection will be conducted prior to opening.
