108. Glasswasher now provides 100ppm chlorine in sanitizing rinse. Test strips provided. Operator knowledgeable of correct operating procedures and sanitizer testing procedures for glasswasher.
109. Sanitation log maintained daily. Operator knowledgeable of correct sanitizer concentration testing procedures.
Approved to use glasswasher. Disposable cups no longer required.
