402  Critical Food is protected from contamination (Sec 12(b))
Observation: A jar of garlic in oil was observed at room temperature in dry storage.
Corrective Action: Product was discarded at time of inspection. Garlic stored in oil creates a suitable anaerobic growth environment for Clostridium botulinum bacteria and potential for botulism toxin formation. This type of food product must always be stored under refrigeration in the future to preclude botulism growth and/or production of toxin. Note: botulism intoxication may result in muscle paralysis.
505   Food premises maintained in a sanitary condition (Sec 17(1))
Observation: A few rodent droppings were observed in hard to reach corners of the kitchen.
Corrective Action: Conduct a thorough cleaning of these areas.

Comments:

A routine inspection of the premises was conducted; the following were in compliance with the Food Premises Regulation:
- Hand washing station is within easy access to food handling area and supplied with soap/paper towel.
- Foodsafe trained staff were on site at time of inspection.
- Refrigeration and freezer temperatures met regulatory requirements.
- Thermometers provided in fridge and freezer.
- Cold foods are stored in a manner protected from contamination.
- Dried foods are stored in a manner protected from contamination.
- No signs of recent pest activity were observed within the premises.
- Concentration of sanitizing solution for food contact surfaces was adequate.
- Concentration of sanitizing solution in dishwasher's final rinse water was adequate.
- All equipment appeared to be in good working order.
- Premises is generally clean and organized.
- No concerns were noted with food handling.
- Chemicals are stored separate from food storage areas.
- Adequate facilities and supplies are provided for sanitary maintenance of premises.

Recommendations:
- Additional refrigerated storage space in the kitchen would be a beneficial as the fridge was a bit overcrowded during today's visit.
- To protect the site's water supply system, backflow prevention should be in place for the commercial dishwasher. No such device was visible during today's visit.
