Corrective Action: This should now be investigated and repaired/adjusted to -18C minimum.

Observation: There is rusty shelving within the walk-in cooler used for the storage of food products.
Corrective Action: These should now be replaced or sealed leaving a smooth, impermeable and cleanable surface.

Observation: Areas beneath work equipment and in the more difficult to reach places was in need of improvement.
Corrective Action: Cleaning should now and routinely be thoroughly carried out in these places and particular attention should be given floor drains, floor drain grate covers, the ice making cabinet and associated parts, corners of reach-in refrigerators and the ice sink and associated parts.

Observation: The chest freezer is now in need of defrosting and cleaning.
Corrective Action: This should now and routinely be carried out.

Observation: The wash-hand station provided at the pizza station was covered with a wooden board to facilitate food preparation.
Corrective Action: The wash-hand station should be available for use at all times and should not be covered.

Observation: The handle of the pizza cutting wheel was distorted through heat and was difficult to clean effectively.
Corrective Action: This should now be discarded and replaced.

Observation: The hot water tank located in the food storage area adjacent the main kitchen has a leak and water is collecting in the tray below it and now has mould growth.
Corrective Action: The tank should now be repaired.
