Observation: The large chest freezer was in a state of disrepair and temperature was noted at -15C.
Corrective Action: The freezer should now be repaired or replaced and to ensure a temperature of -18C.

Observation: The food storage area within the basement of the building was in need of cleaning.
Corrective Action: All areas should now and routinely be thoroughly cleaned.

Observation: The floor covering of the walk-in cooler was of cardboard and was in a dirty condition. Food was being stored on the floor at the time of the inspection.
Corrective Action: The floor covering should be replaced with a smooth, cleanable and impermeable surface and food should be stored off of the floor at all times to prevent risk of cross contamination to food contact surfaces.

Observation: Cleaning throughout the kitchen and food storage areas was in need of improvement.
Corrective Action: Routine and thorough cleaning should now be carried out in line with the sanitation plan.

Corrective Action: These should now be provided.

Corrective Action: This should now be repaired and routinely defrosted and cleaned.
