108  Critical Repeat Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Sanitizing rinse for dishwashing not at proper concentration for adequate time ( Iodine 12.5ppm). 1.No sanitizer in final rinse of dishwasher at time of inspection.2.Test strips not available to monitor concentration of sanitizer. 3.Sanitation Logs still not being maintained on a daily basis.
Corrective Action: 1.Have dishwasher repaired! 2.Obtain test strips to monitor concentration of sanitizer in final rinse of dishwasher. 3.Maintain Sanitation Logs on a daily basis. ***Immediately, use only bottled products and single service containers. Contact this office once dishwasher is repaired. If this violation is cited again, fines will be charged.
113   Improper Sanitary Facilities
Observation: Plumbing not properly installed and maintained. Potential for cross connection at ice machine.
Corrective Action: Ice machine needs air gap - have repaired immediately!
116   Improper Construction / Maintenance of Establishment
Observation: Floors under ice machine and in bar area are showing unclean surfaces - wet, dirt, grime.
Corrective Action: The floors under ice machine and in bar area must be thoroughly cleaned and kept clean.
121  Critical Repeat Inadequate food safety training - staff
Observation: None of employees presently on staff have completed the required food handler training program (FoodSafe). Operator (certified FoodSafe Level 1) available at time of inspection.
Corrective Action: The operator must ensure that in their absence at least one employee on duty has a FoodSafe Certificate, as per Section 10(2) of the Food Premises Regulation.The fine for failing to have adequately trained employees is $230.00. FoodSafe training required as soon as possible.
