108 | Critical Repeat Improper Cleaning, Sanitizing of Equipment and Utensils Observation: Sanitizing rinse for dishwashing not at proper concentration for adequate time ( Iodine 12.5ppm). 1.No sanitizer in final rinse of dishwasher at time of inspection.2.Test strips not available to monitor concentration of sanitizer. 3.Sanitation Logs still not being maintained on a daily basis. Corrective Action: 1.Have dishwasher repaired! 2.Obtain test strips to monitor concentration of sanitizer in final rinse of dishwasher. 3.Maintain Sanitation Logs on a daily basis. ***Immediately, use only bottled products and single service containers. Contact this office once dishwasher is repaired. If this violation is cited again, fines will be charged. |
