Corrective Action: Temperature logs started with operator today - please continue!

Observation: 1.Floors,walls, in food prep and sushi prep areas are not in good repair and showing unclean surfaces.
Corrective Action: 1.The following are outstanding items: i.Clean floors in corners, under equipment, and at floor wall joins - esp. under rice cooker and fryer. iii.Clean and repaint walls - esp. pass through to booth section and office area. 1.A. (new)Install coving at floor/wall joins in service area.

Observation: 2.Walk-in cooler is showing unclean areas on shelves.
Corrective Action: 2.i.Thoroughly clean walk-in cooler. ii.Re-paint shelves in walk-in cooler.

108.1.Gauges for dishwasher on order and will be installed when received. Thermometer used to monitor internal temperature of dishwasher.
108.2.Internal temperature of dishwasher being monitored and temperatures recorded on Sanitation Log.
110.1.preparation for raw chicken restricted to 1 area in food prep area - kept clean and sanitized / away form cooked and ready to eat foods.
110.3.Sanitation logs (dishwasher temp / sanitizing solution for surfaces) is being maintained.
116.1.ii.Shelves are being wiped down on a regular basis.
116.1.i. and iii.Some work has been done (see above comments).
116.2.Some cleaning has been done in walk-in cooler... must be maintained (see comments above).
118.Permit to Operate posted in view of the public.
