105 | Critical Repeat Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s) Observation: Prep cooler is still not maintaining food temperature below 4 degrees Celsius. Cooler is overcrowded; solid shelves do not allow for proper air flow and lids are not kept on inserts on the top line. All hazardous foods moved to the walk-in cooler; food on bottom remained as adequate temperature was being maintained in this area. Corrective Action: Entire cooler must be emptied at the end of the shift; do not use for food storage overnight. Monitor temperature of the empty cooler to get a true sense of the cooler temperature - temperature logs must be maintained. |

Areas that have been addressed since the previous report (Sept. 4/07):
110 - There were no glasses or beverage containers stored in the bar ice at the time of inspection; staff appear to be using a proper scoop to place ice in drinks.
116 - Grease build-up has been removed from under counters and equipment; ensure areas prone to grease build-up are cleaned on a regular basis.
