Observation: 1. Filth was beginning to accumulate in hard to reach areas of kitchen. 2. Excess clutter and items not needed for operation were being stored in the facility
Corrective Action: 1. These areas must be cleaned immediately. Accumulation of filth in a food facility increases the likelihood of contamination of food by biological, chemical and physical hazards. Additionally, it makes the facility more prone to occupancy by pests. 2. Clutter and items not needed for operation must be removed and/ disposed of immediately. These items take up valuable storage space which is needed in a facility this small. When removed storage can be organized more appropriately which will facilitate easier cleaning.

Observation: Wiping cloths were observed not being stored in a sanitizing solution.
Corrective Action: Ensure that wiping cloths are stored in a sanitizing solution. This is to ensure that the cloths are maintained in a sanitary condition and are not re-contaminating the surfaces they are used to clean and sanitize.

Comments:

Dishwasher is sanitizing properly, > 50 ppm chlorine.
All protective temperatures met health requirements.
Professional pest control is being used.

Recommendations:
Facility is in need of a dedicated handwashing basin, not just using the food prep sink as a the handwashing sink as well.
Facility is also in need of a janitorial sink.
In general facility is to small for size of operation but with diligence the operator can make do.
