Comments:

A Permit to Operate a food service establishment has been issued. Opening day is anticipated to be November 6/08.
Conditions on the Operating Permit:
1. Food safety and sanitation plans must be reviewed annually or as menu/operational changes are made.
2. A utility sink must be installed in the main kitchen area prior to December 15/08.

Final items that have been received/completed from the previous report:
1. The food safety and sanitation plans have been submitted and approved.
2. All handsinks are now installed and adequately stocked with liquid soap and paper towel.
3. Items noted on the construction approval letter have been addressed.

Outstanding items that need to be addressed prior to opening:
1. Light covers are to be installed in the preparation area.
2. The base of the walk-in cooler must be sealed.

Additional items that were noted at the time of inspection:
1. All coolers were maintaining temperature < 4C.
2. The facility was constructed and finished according to the approved plans.
3 The glasswashers located in the bars have an adequate concentration of iodine for sanitizing (measured at 12.5 ppm).
4. The low temperature dishwasher rinse cycle has a chlorine concentration of 100 ppm = good.
5. Hooks should be installed in the cleaning cupboard to allowing mops to be hung for drying.
6. Operator has indicated that all food handlers are required to have Foodsafe Level 1 and all supervisors/managers have Foodsafe Level 2 - please forward copies of Foodsafe certificates for our files.
