Observation: Observed eggs being stored at the room temperature on the line cooler table during a not so busy period in the restaurant..
Corrective Action: Eggs must be stored under refrigeration. This violation was corrected at the time of this inspection.

Observation: Ice scoops are stored inside the ice.
Corrective Action: Store ice scoops in a clean container.

Observation: a)Line cooler inserts are not covered with the lids and are overfilled.
Corrective Action: Keep the inserts on the line cooler covered to make them maintain the refrigeration temperatures. Recommend changing all the plastic inserts to metal ones and not filling them more than 1/2 to help maintaining of refrigeration temperatures.

Comments:

Generally a well maintained facility. All temperatures are being monitored. Dishwashing temperatures are being monitored. The operator is recommended to monitor and document iodine concentration in the glass washer. The operator is recommended to provide a paper towel dispenser at the bar hand washing sink.
