Observation: The upright freezer is full of ice, dirty and has raw wood that is showing signs of mold.
Corrective Action: Freezer must be cleaned and all raw wood removed - operator has indicated that a new freezer is on order.
116   Repeat Improper Construction / Maintenance of Establishment
Observation: Filters in the ventilation system have a build-up of grease.
Corrective Action: Filters must be cleaned immediately and on a regular basis to prevent grease build-up.

Observation: Cardboard is still be used as mats on the floor - removed at the time of inspection.
Corrective Action: Proper (rubber) mats that can be cleaned must be used.

Observation: There are raw wood shelves in the dishwashing area that are showing signs of mold.
Corrective Action: These shelves must be removed/replaced as they can no longer be properly cleaned.
