Observation: The #3 Line cooler was measured at 22C - all foods were discarded.
Corrective Action: Discontinue using this cooler until the unit can be serviced.

Observation: Temperature logs for the refrigeration units were not up-to-date.
Corrective Action: Ensure that temperatures are checked at least twice per day and recorded in the log - this will be checked during the follow-up inspection.

Observation: The seal for the #2 Line Cooler is in disrepair.
Corrective Action: Replace the seal.

Observation: There are no sanitizer buckets for storing wiping cloths.
Corrective Action: Ensure that a sanitizer bucket is placed at each station for storing wiping cloths with a minimum concentration of 200ppm quatz sanitizer or 100ppm chlorine.

Comments:

The walk-in cooler measured <4C, all foods were labeled with dates and stored at least 6 inches off the floor - good.
General sanitation was good.
Dishwasher sanitizer concentration was measured at 50ppm chlorine - good.
The quatz sanitizer bottles measured a concentration of 200ppm - good.
The hand washing station was equipped with liquid soap and paper towel - good. Ensure this station is easily accessible at all times for kitchen staff.
This facility has an up-to-date food safety plan and sanitation plan.
The bar area was clean with the exception of some fruit flies. Recommend using a foam enzymatic drain sanitizer to mitigate this problem.

A follow-up inspection is required to allow the use of Line Cooler #3 once it has been serviced.
