105	Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s) Observation: Both of the line coolers were noted at between +12C and +14C. Corrective Action: As discussed, these should not be used for potentially hazardous food until food temperature control can be returned to +4C or less.
109	Critical Other (Specify) Observation: The floors to both the walk-in cooler and the walk-in freezer were dirty and appeared to have not undergone recent and routine cleaning. Corrective Action: These should now and routinely be thoroughly cleaned.
109	Critical Other (Specify) Observation: The kitchen floor behind and beneath work equipment was dirty and appeared to have not undergone recent routine cleaning. Corrective Action: Work equipment and floors should now and routinely be thoroughly cleaned in line with the sanitation plan.
110	Repeat Food Not Protected - General Observation: Potentially hazardous food was being stored without covering, or information of age. Corrective Action: Food should be covered and day/date labelled for stock control and food status awareness.
110	Food Not Protected - General Observation: The dry food store constructed to the rear of the building is not finished with an approved surface that is smooth, cleanable and impermeable. Corrective Action: A permit application has not been made for this addition and one is now required.
110	Food Not Protected - General Observation: Where bags of dry food have been previously opened the remainder should be stored in a protective container. Corrective Action: Food grade containers with fitted lids should be provided for this purpose.
110	Food Not Protected - General Observation: One of the light fittings provided over the stove is not provided with a protective cover. Corrective Action: A protective cover should now be provided.
110	Food Not Protected - General Observation: The floor drain appears blocked within the kitchen. Corrective Action: This should now be flushed through and a floor drain cover provided to prevent food debris building up within the drain.
110	Food Not Protected - General Observation: The milk fridge was noted at +9C. Corrective Action: This should now be repaired/adjusted to ensure food temperature control of +4C or less.
116	Improper Construction / Maintenance of Establishment Observation: The door edge seals of one of the two kitchen reach-in fridges are in disrepair. Corrective Action: These should now be replaced.
118	Other (Specify) Observation: Thermometers are not provided within all fridges. Corrective Action: Working thermometers should now be provided.
