Observation: Both of the line coolers were noted at between +12C and +14C.
Corrective Action: As discussed, these should not be used for potentially hazardous food until food temperature control can be returned to +4C or less.

Observation: The floors to both the walk-in cooler and the walk-in freezer were dirty and appeared to have not undergone recent and routine cleaning.
Corrective Action: These should now and routinely be thoroughly cleaned.

Observation: The dry food store constructed to the rear of the building is not finished with an approved surface that is smooth, cleanable and impermeable.
Corrective Action: A permit application has not been made for this addition and one is now required.

Corrective Action: Food grade containers with fitted lids should be provided for this purpose.
