Follow up to the routine inspection done today afternoon.

The operator has proposed a new menu with five items on it. A separate breakfast menu with five items is also being proposed.

Briefly discussed the handling procedures for the lunch menu items. As per information provided by the chef, preparation of these items does not require storing food on the line cooler inserts.

The operator to forward the handling procedures for these items to the EHO for a further review. These handling procedures should indicate the preparation steps in the downstairs kitchen. In the meantime, the operator can start serving the newly proposed menu with 5 items in breakfast and lunch each.
