108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: There is no detectable sanitizer in the dishwasher. The detergent container for the dishwasher is empty.
Corrective Action: The dishwasher must be repaired to get 50 ppm chlorine concentration within 48 hours of this inspection. The detergent bucket needs to be replaced immediately. Until the dishwasher is repaired, all the dishes must be manually sanitized in 100 ppm bleach after running through the dishwasher.
110   Food Not Protected - General
Observation: Observed a box of chicken being thawed at the room temperature.
Corrective Action: Meats must be thawed in the refrigerator or under running cold water.
113   Improper Sanitary Facilities
Observation: Both the taps faucets in the kitchen are not functioning. The only way to open an close these taps is by opening and closing the main valve located underneath the sink.
Corrective Action: The taps must be repaired to make the hand washing convenient. It must be done within a week from the day of this inspection.

Observation: No paper towel available at the sink in the front service area.
Corrective Action: Paper towels must be provided on the front sink.
115   Inadequate Insect / Rodent Control
Observation: Rodent droppings in the kitchen were observed indicating the rodent infestation.
Corrective Action: The kitchen floor must be cleaned and all the surfaces sanitized. A pest control professional must be hired to monitor and control the rodent/pest infestation. Target completion date 2 days from the date of this inspection.
116   Repeat Improper Construction / Maintenance of Establishment
Observation: The kitchen floor is dirty and is in need of a thorough cleaning.
Corrective Action: A through cleaning of kitchen must be done with in 2 days of this inspection. More frequent cleaning of the floor and walls is needed in future.

Observation: There are some tiles missing in one of the kitchen corner and lot of debris has been accumulated in the this area.
Corrective Action: The floor tiles must be repaired/replaced before April 30, 2011.
