105  Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
Observation: The temperature of the food in the inserts of the one of the line cooler is warmer than 4 degree Celsius.
Corrective Action: The line cooler must be able to maintain less than 4 Degree Celsius temperature in the inserts. This line cooler must be repaired. In the mean time, all the potentially hazardous foods not used within 2 hrs of storing on the inserts must be discarded. Target completion for the line cooler repair- 1 week from the date of this inspection.
108  Critical Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: None of the spray bottles have sanitizer in it. An approved sanitizer solution not available to sanitize the food contact surfaces. Some food handlers confuse Orange Force cleaner with the sanitizer.
Corrective Action: Approved sanitizer solution ( 100 ppm bleach, 200 ppm quat or 25 ppm iodine) must be available to sanitize the food contact surfaces. This violation corrected at the time of this inspection by making a fresh solution of quat sanitizer. A sanitizer solution bucket to store the wiping clothes is highly recommended in addition to the sanitizer spray bottles.
116   Improper Construction / Maintenance of Establishment
Observation: The water condensate collecting pipe in the walk in freezer has an ice build up around it.
Corrective Action: The ice build-up in the freezer must be cleared. The reason for the ice build-up be investigated and the necessary corrective repairs be done. Target completion date - 15 days from the date of this inspection.

Observation: The tap on the front bar sink is providing water at a very high velocity creating a splash which can potentially contaminate the ice cubes in the nearby ice sink.
Corrective Action: The tap on the front bar sink must be repaired to reduce the velocity of water. Target completion- 15 days from the date of this inspection.

Observation: Temperature logs are not being maintained.
Corrective Action: Temperature logs should be maintained for all the refrigeration, hot holding, freezing equipment and the dishwasher rinse cycle.

Corrective Action: Sanitizer test strips must be provided to test for sanitizer concentration in the spray bottles and the glass washer.
122  Critical Inadequate Food Safety Plan
Observation: An updated food safety plan has not been submitted.
Corrective Action: An updated food safety plan must be provided within 1 week from the date of this inspection.
130   Inadequate Sanitation Plan
Observation: A written sanitation plan is not available.
Corrective Action: A written sanitation plan must be provided and kept on site. The written sanitation plan must have the following information: - The cleaning and sanitizing requirements for the equipment and facility. - The identification of the cleaning and sanitation agents used in the facility, including their concentration and their uses. - The identification of pesticides used in the establishment, including their uses and storage requirements.

Comments:

In compliance items:
1. The dishwasher is sanitizing at more than 71 Degree Celsius at the dishes.
2. The walk in cooler and the lower portion of the line coolers are below 4 Degree Celsius.
3. Freezer temperatures are below -18 Degree Celsius.
4. Foodsafe level 1 certified food handlers available on site. The manager is Foodsafe certified.
5. No concerns identified with the food handling and storage practices.
6. Complying with Trans Fat Regulation.
7. The hand washing station are equipped with soap and paper towel.
8. No visible signs of any pest infestation.

Recommendations:
The front bar hand station has the paper towel available. The operator recommended to provide the paper towel in a dispenser.

Note: The line cooler in the corner of the kitchen is broken and not being used at the time of this inspection. As per information provided by the manager, a repair order has been placed for this line cooler.
