No violations were found during the inspection

Comments:

A follow-up inspection was conducted to review and discuss works completed since the October 20th inspection. The following was noted:
1. Dry storage items are now in sealed containers.
2. Caulking behind the dish area has been replaced.
3. Floor tiles were repaired under the dishwasher.
4. Light covers have been replaced.
5. The wooden handsink cabinet is scheduled to be removed and replaced with a stainless cabinet which can be easily cleaned.
6. A new cleaning schedule has been developed.
7. Seals for the freezer door are on order.
8. A handle for the freezer door is on order.
9. The leak in the salad cooler has been repaired.
10. Test strips are on site for monitoring the concentration of sanitizing solutions.
11. Some improvements have been made in overall cleaning, more work is still required under equipment.

Regarding the kitchen floor:
Since the last inspection, rubber matting has been installed along the length of the kitchen between line coolers and cooking equipment. Because of the size and design of these mats, they are cumbersome to move and clean and will likely hinder cleaning efforts under kitchen equipment. These are not suitable in this application and must be removed. Should this facility still desire to provide some rubber matting in the kitchen, there are a number of suitable alternatives which can be discussed. Anything that is installed should be easy to clean (i.e. small enough to run through the dishwasher at the end of the day) and not hinder access to clean under kitchen equipment with a broom and mop. There was a noticeable accumulation of food debris and silverware under the equipment at the time of the inspection.

Contact the health department for a follow-up inspection once the new hand sink cabinet has been installed and prior to the purchase/installation of any replacement rubber mats.
