Observation: The shelves and utensil hangers above the prep table cannot be easily cleaned because of their design/installation.
Corrective Action: Install proper shelving and hooks for utensils. Recommend a larger shelf that will accommodate all items currently stored on the prep table - creating more space for food handling.
402  Critical Food is protected from contamination (Sec 12(b))
Observation: Baked items on display were not wrapped or covered.
Corrective Action: Ensure that all bakery items on display are protected from contamination by either sneezeguard, bakery dome or individually wrapping.

Other Violations:
118 - Observation: The dry storage area in the back of the premises has a number of items stored directly on the floor.
Correction: All items should be stored at least 6 inches off the floor to facilitate cleaning and enable monitoring for pest activity.

118 - Observation: A tea towel is presently used on top of the dishwasher where items are placed to dry.
Correction: Replace tea towel with bar matting that can be easily cleaned.

General Observations:
All temperatures met regulatory requirements, fridges were equipped with thermometers and temperature logs were up to date.
Hand washing facilities supplied with liquid soap and paper towel, sanitizing solution available for food contact surfaces tested 200ppm quat.
Dishwasher measured 71C during final rinse cycle, tested at the plate.
Facility is clean and well maintained - no concerns with food storage or food handling were noted.
There were no signs of pest activity noted.
