Observation: Butter stored in ice bath on the counter measured 17C.
Corrective Action: Store all potentially hazardous foods in a refrigerator at or below 4C. This was corrected at time of inspection.

Observation: The concentration of sanitizer in sani buckets measured approximately 50ppm quatz.
Corrective Action: In order to effectively sanitize wiping cloths, the concentration of sanitizer must be at least 200ppm. Ensure these buckets are changed regularly so the correct concentration is maintained.

Comments:

All temperatures met regulatory requirements.
Staff are foodsafe trained.
Dishware is washed in main kitchen of Dusty's Bar.
No signs of pests.
All hand sinks were supplied with liquid soap, paper towel and hot/cold running water.
Temperature logs were up-to-date.
Thermometers were present in all coolers.
Food handling was observed during inspection - no concerns.
General sanitation and maintenance was acceptable.
Concentration of sanitizer in spray bottles tested 200ppm quatz - good.
