Observation: 1) Taco Bell refrigerated Cold line food recorded temperatures between 6C and 10C. 2) Gravy hot-holding at 58C.
Corrective Action: 1) Recommend supplementing Taco Bell cold line with ice - to maintain food temperature at 4C, or below. 2) Gravy discarded at time of inspection. Hot-holding unit had not been turned on, after gravy had been heated in steam table.

- Reviewed chicken cooking procedures with manager.
- Temperature logs maintained daily.
