In compliance items:
1. The display cooler and both the prep coolers are below 4 Degree Celsius.
2. The freezer temperature below -18 Degree Celsius.
3. The dishwasher is sanitizing at more than 71 Degree Celsius on the dishes.

5. The sanitizer spray bottle has more than 200 ppm sanitizer solution.

General Discussion:
The air temperature in the walk in cooler fluctuates due to frequent opening and closing. At the time of this inspection the temperature on the walk in cooler temperature gauge was observed to be lower than the actual air temperature in the cooler. The operator requested to monitor the temperature of the walk in cooler with a probe thermometer in a cup of water and adjust the thermostat to a lower setting, if required.
Discussed with operator the procedures to clean and sanitize the cutting boards and other food contact surfaces. The operator is advised that the vinegar is not an approved sanitizer for the food contact surfaces. The operator is recommended to store the wiping clothes in an approved sanitizer solution in addition to using sanitizer from the spray bottles.
