Items for correction from today:

1. The handwash station should be more accessible – either put it in the tent or provide an opening in the tent so it can be accessed easily.
2. The tent sides were pressing up against some of the product at the time of inspection due to the wind. Ensure the product is placed so that this can’t happen. Additionally to protect against the wind, you should do something to shore up the one side so that the wall is higher and put something behind it to make it sturdy so the tent sides do not blow inward and touch the food.
3. There are 2 issues you will need to contend with –wind-blown debris and flies. Today it was windy and some windblown plant seeds were getting inside. This can be controlled by protecting the one side where the wind was letting these things enter. On other days you may experience problems with flies – so you should have some extra containers on hand to protect the product should this occur. In either case you should have contingencies to deal with these problems as they arise.
