Observation: Enhanced cleaning is required in the dry storage area above the walk in cooler next to the pop syrup storage.
Corrective Action: Ensure that this cleaning is now completed.

Observation: The doors to the prep and storage room downstairs are not properly sealed to prevent the entry of pests.
Corrective Action: Provide door sweeps to the 2 metal doors to this room so that it is sealed off from pests - the sweeps should ensure that there is no space greater than the size of a dime under the doorway.
402   Food is protected from contamination (Sec 12(b))
Observation: Boxes of tortilla chips are stored in the garbage room.
Corrective Action: Ensure all food is stored in a clean and sanitary area protected from contamination. If an additional food storage area is required, provide a cleanable sealable closet or cabinet to store any additional food items not stored in the prep room or the upstairs kitchen.

Observation: The line cooler next to the kitchen hand sink is running slightly warm at the time of inspection.
Corrective Action: Adjust the line cooler to 4C or provide maintenance on the line cooler to lower the temperature. Provide enhanced temperature monitoring of the line cooler to ensure that 4C is maintained.

Observation: The hand sink in the server station is broken, there is a problem with the drain.
Corrective Action: Repair the server station hand sink.

Observation: The kitchen ice machine door is broken, and the basin is in disrepair and the condenser is leaking out the front of the machine.
Corrective Action: Provide a new ice machine for the kitchen.

Observation: The dishwasher sanitizing rinse took a long time before proper temperatures were reached. The rinse thermometer is still broken (second request).
Corrective Action: Maintenance is required on the dishwasher to ensure that the booster heater can consistantly reach 71C at the dish. Fix the dishwasher rinse thermometer or demonstrate how the rinse temperature is measured by staff during the follow-up inspection.
