Observation: All potentially hazardous foods are not stored under refrigeration (4ºC / 40ºF or less ).
Corrective Action: Replace self serve ice bar with mechanical refrigeration; ensure a 2 hour turnover or discard food.
108  Critical Repeat Improper Cleaning, Sanitizing of Equipment and Utensils
Observation: Sanitizing rinse for dishwashing not at proper temperature (82ºC /180ºF). Food contact surface sanitizer bottle not replenished.
Corrective Action: Dishes will be cleaned in the Wildflower kitchen until Oscar's dishwasher is repaired. Ensure sanitizer is available at all times for food contact surfaces and equipment.

Plans for dining room and kitchen equipment upgrades are expected within 2 months.
