Observation: There is food debris and spills on the dry storage shelves. Shelves are constructed of raw wood.
Corrective Action: A thorough cleaning is required in this storage area; shelves must be covered or replaced with a material that can be easily cleaned.
117   Food Handler Training
Observation: At the time of inspection, there was no employees on duty with FoodSafe training.
Corrective Action: The operator must ensure that in their absence at least one employee on duty has a FoodSafe or equivalent certificate.

Additional items discussed at the time of inspection:
The sanitizer in the glasswasher was measured at 100 ppm chlorine = good.
Knowledge of the proper manual dishwashing procedures were described by staff.
All refrigeration temperatures and hot holding temperatures are satisfactory.
Reviewed procedures for cleaning the milkshake machine - ensure that all staff are aware that only the mixer and not the refrigeration is to be turned off at night.
