No Sanitation log being maintained. Corrective Action: Dishwasher must be repaired to ensure 100ppm chlorine is being provided in rinse cycle. Operator must monitor sanitizer concentration daily with test strips. Results must be recorded on Sanitation log. Log must be made available to EHO during routine inspections.
